Champ is an Irish dish, made by combining mashed potatoes and chopped spring onions with butter and milk, and optionally, salt and pepper.

It is similar to colcannon , which is done with bacon and kale.

I like to boil the potatoes and warm a little milk with the spring onions in it and then use the onion flavoured milk to mash the potatoes. It's really tasty and goes with all sorts, steak, chicken and pork chops.

Not sure if it's Irish or Scottish, either way it's really tasty.

It's amazing the simple things you can do with the good old potatoe to make them taste really good.

Another favourite of mine is finely sliced potatoes layered with onions. Put a little milk in and plenty of salt and pepper. Dot with a little butter and cook covered in the oven until cooked through. Uncover for the last 15 mins to get nice crispy bits.

You can tell my family like potatoes  ::)

we love potatoes in any form, a meal in our house isnt complete without them, i dont eat much meat but could live on mash and veggies  :)

Oh yes love that too HB. However, my hubby is such a blooming fuss pot. If it ain't peas or beans it ain't worth having. His mum wasn't a good cook. She cooked cabbage whole, she peeled all the leaves on sprouts then boiled. Neither hubby or his dad ate, so it was tinned peas or beans. I love veg. I cooked red cabbage the other night. Hubby had a spoonful, I had a plateful!  ;D

Yep  ;) ……. too many greens can have an adverse effect on the gut - bit like cows in a field chewing the cud  :-X  :P - at least wind becomes a problem in our house  :D

I LOVE potatoes in any form ……… have to say that home grown broccoli is causing problems with pain 5 hours after eating it followed by a dash to the bathroom until my toes turn blue  :-\
